Coconut Polenta Pudding

very rich + very filling, but easy to make

Ingredients:

  • 4 cups Milk (or half coconut cream + half water for vegan option)
  • ¾ cup sugar
  • 1 cup polenta (cornmeal)
  • ¼ cup raisins
  • 1 tsp vanilla essence
  • ¼ cup chopped walnuts (optional)
  • ¼ tsp coconut essence
If baking, the following additions:
  • 1 Large apple
  • 1 1/2 tsp Maple syrup
  • 3 tsp superfine sugar
  • ½ tsp cinnamon

Method:

1) Heat milk, sugar in a saucepan, bring almost to the boil.

2) Remove from heat and whisk in polenta.

3) Add raisins and walnuts.

4) Return to heat and continue to stir until the mixture thickens.

5) Add coconut essence (optional) and vanilla essence.

To enjoy it as is:  Spoon into a dessert bowl, sprinkle with coconut and add a piece of fruit

OR

To enjoy it after baking :

1) Spoon the pudding mixture into the tin, top with sliced apple, pour over maple syrup.

2) Sprinkle with cinnamon powder and sprinkle over extra sugar (optional)

3) Bake at 350-375 deg F (in a moderate oven) for 35 min, or until apple is tender.
