Sprouted Moong Dhokla

Sprouted Dhokla are full of energy & addition of Carrot makes these Dhokla more healthy tasty.

Ingredients:

  • 1 cup whole sprouted moong beans
  • 1 tbsp ginger-green chili/Thai pepper paste
  • 1 tbsp chopped cilantro leaves
  • 1 tbsp chopped fenugreek (methi) leaves
  • ¼ cup grated carrots
  • ¼ cup finely chopped cabbage
  • 1 tbsp besan (chickpea flour)
  • 1 tsp baking soda
  • Salt to taste

 

For tempering:

  • 1-2 tbsp oil or ghee
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • a pinch of asafetida

 

For Garnishing:

½ cup chopped cilantro leaves

Directions:

  • Blend the sprouted whole moong beans with very little water into a semi-coarse paste. The batter should not be too thick or thin.
  • Mix the chickpea flour (besan), ginger and chili paste, grated carrot, chopped cabbage, and chopped fenugreek leaves, and salt according to taste to the batter. Then add baking soda and mix well.
  • Grease a flat pan with some oil.
  • Pour the batter immediately after mixing baking soda into the greased pan.
  • Place the pan in a steamer and steam for 12-15 min until the dhokla is done.
  • For tempering: In a separate pan, heat oil, add mustard seeds, cumin seeds, and asafetida and pour this tempering over the dhokla.
  • Garnish with coriander leaves.
  • Cut the dhokla into 2-inch pieces and Serve hot dhokla with mint or cilantro chutney.
