Butternut Squash Lentil Soup

This Soup is easy to make with its simple ingredients & taste amazingly good

Ingredients:

  • A small butternut or half if large – peeled and diced
  • 1 tablespoon oil
  • 1/3 cup white cabbage
  • ¾ cup red lentils
  • 1/3 cup parsley
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • pinch of cayenne (optional)
  • 5 cups water
  • 4 bay leaves

Directions:

  • Heat a heavy bottom pan
  • Add oil, sauté cabbage, washed lentils, diced butternut, salt, thyme, black pepper, water
  • Cover pan and cook for 30 minutes, stirring every 10 min.
  • Cook until butternut squash is soft to touch
  • Add Parsley (reserve some for garnish in the end) and remaining ingredients
  • Place all the ingredients in a bowl and blend with a hand blender or pass through a sieve
  • Garnish with cayenne and parsley
