This Soup is easy to make with its simple ingredients & taste amazingly good
Ingredients:
- A small butternut or half if large – peeled and diced
- 1 tablespoon oil
- 1/3 cup white cabbage
- ¾ cup red lentils
- 1/3 cup parsley
- 1 teaspoon thyme
- 1 teaspoon salt
- ¼ teaspoon black pepper
- pinch of cayenne (optional)
- 5 cups water
- 4 bay leaves
Directions:
- Heat a heavy bottom pan
- Add oil, sauté cabbage, washed lentils, diced butternut, salt, thyme, black pepper, water
- Cover pan and cook for 30 minutes, stirring every 10 min.
- Cook until butternut squash is soft to touch
- Add Parsley (reserve some for garnish in the end) and remaining ingredients
- Place all the ingredients in a bowl and blend with a hand blender or pass through a sieve
- Garnish with cayenne and parsley
