Chickpea Patties are delicious crispy snack & an easy way to include protein in our vegetarian diet
Ingredients:
- 1 lb. or 29 oz. can chickpeas (boiled)
- 1 tablespoon ground cumin seeds
- 1 table spoon dried coriander powder
- 1 tablespoon chili powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon chopped fresh coriander leaves
- 1 tablespoon chopped curly parsley
- 2 tablespoon all purpose flour
Directions:
- Place chickpeas, olive oil in a food processor. Pulsate or grind until thick paste. Add ground spices and rest of the ingredients. Lastly bind it with the all purpose flour.
- Let the mixture rest for 15 minutes
- Divide the mixture in 12 golf size balls and flatten them into small patties
- Shallow fry in a wide frying pan in small batches until golden brown.
