A quick and easy dish made with fenugreek leaves and paneer (Indian cottage cheese)
Ingredients:

2 tbsp. oil

1 tomato
-
Paneer cubes (Approx. 2 cups)

A small chunk of ginger
-
1-2 green chilies
-
Salt, 1/2 tsp red chili powder
-
1/2 tsp turmeric powder, black pepper
-
1/2 tsp cumin seeds, 1 tsp coriander seeds
-
1/4 cup heavy cream
-
1/4 cup water
-
Dry fenugreek leaves
-
Chopped cilantro leaves for garnishing
Directions:

Blend one tomato, green chili, cumin seeds, coriander seeds, a chunk of ginger into a fine purée

Heat the pan and add oil
-
Once the oil is heated add red chili powder and turmeric powder
-
Add purée and salt. Cook on medium flame
-
Now add pepper. Add cream and water to adjust consistency
-
Sprinkle a few fenugreek leaves and add paneer cubes
-
Cook for 2-3 min, garnish with chopped cilantro leaves and serve
