Instant Paneer Methi

A quick and easy dish made with fenugreek leaves and paneer (Indian cottage cheese)

Ingredients:

  • 2 tbsp. oil
  • 1 tomato
  • Paneer cubes (Approx. 2 cups)
  • A small chunk of ginger
  • 1-2 green chilies
  • Salt, 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder, black pepper
  • 1/2 tsp cumin seeds, 1 tsp coriander seeds
  • 1/4 cup heavy cream
  • 1/4 cup water
  • Dry fenugreek leaves
  • Chopped cilantro leaves for garnishing

Directions:

  • Blend one tomato, green chili, cumin seeds, coriander seeds, a chunk of ginger into a fine purée
  • Heat the pan and add oil
  • Once the oil is heated add red chili powder and turmeric powder
  • Add purée and salt. Cook on medium flame
  • Now add pepper. Add cream and water to adjust consistency
  • Sprinkle a few fenugreek leaves and add paneer cubes
  • Cook for 2-3 min, garnish with chopped cilantro leaves and serve
