These lentil pancakes are great as snacks, packed lunches, or appetizers
Ingredients:

1/8 cup rice flour

1/8 cup chickpeas flour

1/8 cup green moong flour

2 tbsp urad dal batter

1/4 cup water approx.

An inch of grated ginger

2 tbsp grated zucchini
-
2 tbsp carrot
-
salt
-
pepper
-
cumin powder
-
ajwain seeds
-
clarified butter (ghee) for cooking
Instructions:

Combine veggies + ginger + all dry flour + 2tbsp urad dal batter + water to form a batter.

Add black pepper + salt + ajwain seed + cumin seed powder

Heat a pan on medium flame. Pan should be hot when you pour the batter.

Take the batter and spread on the pan. Cook on medium flame till it
starts turning golden brown. -
Add ghee on the sides, flip it, cook from both sides and pancake is ready
-
Serve with yogurt and green chutney
