Lentil Pancakes

These lentil pancakes are great as snacks, packed lunches, or appetizers

Ingredients:

  • 1/8 cup rice flour
  • 1/8 cup chickpeas flour
  • 1/8 cup green moong flour
  • 2 tbsp urad dal batter
  • 1/4 cup water approx.
  • An inch of grated ginger
  • 2 tbsp grated zucchini
  • 2 tbsp carrot
  • salt
  • pepper
  • cumin powder
  • ajwain seeds
  • clarified butter (ghee) for cooking

Instructions:

  • Combine veggies + ginger + all dry flour + 2tbsp urad dal batter + water to form a batter.
  • Add black pepper + salt + ajwain seed + cumin seed powder
  • Heat a pan on medium flame. Pan should be hot when you pour the batter.
  • Take the batter and spread on the pan. Cook on medium flame till it
    starts turning golden brown.
  • Add ghee on the sides, flip it, cook from both sides and pancake is ready
  • Serve with yogurt and green chutney
