Vegan Mango Muffins

A delicious tropical vegan muffin. The taste of mango and cardamon, make this muffin melt in your mouth

Ingredients:

  • 2 cups all purpose flour or whole wheat flour
  • ½ cup oil
  • 1 cup sugar
  • 1 ½ cup chopped mangoes
  • 1 cup pureed mangoes
  • ½ teaspoon cardamom
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt

Cardamom sugar topping: 

  • 2-3 tablespoons sugar
  • ½ teaspoon cardamom
  • 1 tablespoon all-purpose flour

Directions:

  • Sieve the all-purpose  flour, baking soda, baking powder, salt and cardamom to mix all the dry ingredients well.
  • Pre heat the oven to 375 degrees F
  • In another bowl add ½ cup oil, sugar, mango puree and mix together.
  • Add the dry ingredients to it and mix.
  • Add the chopped mango and fold in
  • Spray your muffin cases with oil
  • Take a scoop of mixture and put in the cases
  • Put the cardamom topping on each of the muffins
  • Now bake them for 25-30 min
