A delicious tropical vegan muffin. The taste of mango and cardamon, make this muffin melt in your mouth
Ingredients:
- 2 cups all purpose flour or whole wheat flour
- ½ cup oil
- 1 cup sugar
- 1 ½ cup chopped mangoes
- 1 cup pureed mangoes
- ½ teaspoon cardamom
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
Cardamom sugar topping:
- 2-3 tablespoons sugar
- ½ teaspoon cardamom
- 1 tablespoon all-purpose flour
Directions:
- Sieve the all-purpose flour, baking soda, baking powder, salt and cardamom to mix all the dry ingredients well.
- Pre heat the oven to 375 degrees F
- In another bowl add ½ cup oil, sugar, mango puree and mix together.
- Add the dry ingredients to it and mix.
- Add the chopped mango and fold in
- Spray your muffin cases with oil
- Take a scoop of mixture and put in the cases
- Put the cardamom topping on each of the muffins
- Now bake them for 25-30 min
