Motichoor Laddoo

Motichoor Ladoo is a traditional sweet dish to celebrate any festivals and Maha Shivratri is one of them.
Who doesn't love Motichoor ke laddoo? We love them and some of us could easily gobble up a few, ain't it? Now if we know how to make them at home, we would love to have homemade Motichoor ke laddoos, right?

Ingredients:

  • Besan/Chickpea flour 200 gm or 1 ¾ cup(coarse)
  • Semolina flour/Sooji 50 gm or ¼ cup (fine)
  • Orange Food color 1 pinch
  • Ghee or refined oil 750 gm
  • Sugar 2 cups or 400 gm
  • Water 1 cup (for sugar syrup)
  • Cardamom powder 1 Tsp
  • melon seeds 2 Tbsp (optional)

 

For Garnishing:

Pistachio pieces 1 Tbsp

Directions:

  • Take gram flour in a mixing bowl and add sooji to it. Add water little by little and make a flowing consistency batter by mixing with a wooden spatula. The batter should be of a runny consistency.
  •  Keep aside the batter for 15-20 min.
  •  For sugar syrup add 2 cups of sugar and 1 cup water in a pan and let it melt on low flame and bring the sugar syrup to a boil. Keep aside.
  • Pour ghee or refined oil in a wok and heat it.
  • Add food color to the batter and check the consistency again now.
  • Once the oil is hot, hold the boondi ladle on top of the wok and pour some batter in the ladle.
  • Place your other hand underneath the handle and tap the ladle gently on to your hand until all the batter in the ladle falls into the wok as small boondi/beads.
  • Boondi is to be fried on high flame for a crispy texture. Fry boondi for less than 1 min and quickly remove into a strainer. Do not wait till boondi changes color as it will get burnt quickly.
  • Repeat this process until all the batter is used up and boondi is made.
  • Boondi should be crunchy and once it is made spread it out on a flat tray and keep aside.
  • Dry roast melon seeds and keep aside. (optional)
  • Heat the sugar syrup and add less than a pinch of orange/yellow color to it. Can skip if food colors are not preferred.
  • Add cardamom powder to the sugar syrup.
  • Turn off the stove and add boondi to the sugar syrup, mix it well.
  • Turn on the stove and cook until Sugar Syrup disappears from the bottom of the pan. It will take about 2-3 min.
  • Add melon seeds and mix well.
  • Cover the pan with a lid and keep it covered for 15-20 min.
  • Boondi will have absorbed all the sugar syrup by now. Spread it out in a flat tray and let it cool a little bit.
  • Now boondi is ready to make laddoos.
  • Suggestion: If your boondi feels little hard before making into small laddoos, then you can add 1 tablespoon of hot water to make it soft.
  • Apply ghee in your hands and make the laddoos with your hand.
  • Take boondi into your hands and gently press the boondi and roll into small, lemon sized laddoos. Garnish with pistachios on top.
  • Approx. 28 lemon size laddoos can be made from this quantity.
