This quinoa salad is refreshing, crisp and delicious.
Ingredients:
• 1 cup finely chopped celery
• 1 cup finely chopped parsley
• 1 large red pepper diced
• 1/3 cup capers
• 1 can rinse black beans
• 1 diced Royal Gala Apple (put a little lemon juice over it to stop it turning brown)
• 1 cup Quinoa
• Salt, pepper, olive oil, lemon to taste
Directions:
• Mix all the ingredients together except the Quinoa
• Rinse and drain the Quinoa
• For every cup of Quinoa, add 2 1/2 cups of water
• Put 2 ½ cups of water in a pan
• Add the Quinoa
• Add 2 tsp of oil
• Add a pinch of salt and stir
• Put the lid on and put the fire on high (usually takes about 20 minutes to cook)
• When the water is boiling turn to low heat (all the water will be absorbed by the quinoa)
• When the Quinoa is cooled fluff it up with a fork
• Add the Quinoa to the rest of the salad
• Add olive oil, lemon juice, salt, and pepper according to taste and mix well.
