Spice Cake Recipe

Spiced just right, this simple egg free recipe will light up the taste buds.

Ingredients:

  • 3 cups flour (all-purpose or whole wheat)
  • ½ cup sugar
  • 2 teaspoon baking soda
  • 1 cup soft butter
  • 1 tablespoon cinnamon powder
  • 1 teaspoon allspice
  • 1 can evaporate milk
  • 1 can condensed milk (sweetened)
  • 1 teaspoon vanilla
  • 1 can strawberry pie filling

 

Directions:

  1. Mix all the dry ingredients (flour, sugar, baking soda, cinnamon powder, and all spices) together in a bowl using a wooden spoon.
  2. Add the soft butter, evaporated milk, condensed milk and vanilla in the dry mixture and using a hand beater/mixer mix all the ingredients together for about 3 minutes or until the batter is nice and thick (tip: you can use wooden spoon to mix ingredients as well, but ensure that all the ingredients in the bottom are mixed well).
  3. In a different bowl, pour the strawberry pie filling and 1 or 1½ cup of the cake mixture. Using a spatula mix both the items without squashing the strawberries.
  4. Preheat the oven to 325oF. In a 9x 13inch glass pan, brush the bottom and the sides with the butter and sprinkle some flour.
  5. Pour the strawberry mixture to the glass pan and spread the mixture evenly using a spatula.
  6. Pour the cake mixture on top of the strawberry mixture and spread it evenly using a spatula.
  7. Bake the cake for about 45-50 minutes in the oven.
  8. Once baked, remove the pan from the oven and leave the cake to cool down for about 10-15 minutes before you turn the cake on a different tray/board.
