Dough Ingredients:
- 1 cup whole wheat flour (or all-purpose flour)
- Salt to taste

- 1 tablespoon oil
For the stuffing:
- ¼ cup shredded French beans
- ½ cup finely chopped or grated cabbage (green or purple)
- ¼ cup grated Zucchini
- ¼ cup grated carrot
- ¼ cup of squash or baby corn (per taste)
- 1-inch grated ginger
- ½ teaspoon green chili paste or finely chopped green chilies
- ¼ teaspoon of pepper powder (optional)
- ½ teaspoon of soy sauce
Directions:
- Prepare the dough by mixing salt to the flour and by adding a small quantity of water at a time, knead the dough into a medium soft dough. Add 1 spoon oil and knead for 1-2 more minutes. Cover the dough and keep aside for 15-20 min.
- To prepare stuffing, heat 1-2 tablespoons oil in a pan/wok. Add the grated ginger and green chili paste, then add shredded French beans, cabbage, Zucchini, carrots, squash, and other vegetables as above. And sauté for about a minute. Add pepper powder and Soy sauce, mix and cook for 30 sec. Transfer to a different bowl and let it cool.
- Divide the dough into small equal portions and shape them into balls smaller than ball needed to make approximately 3 inches wide.
- Take each ball; flatten with a rolling pin, making sure the center of the puri is not thin compared to sides. Make a few at once and keep them covered with a damp cloth
- Fill with the vegetable mixture (about 1- 1 ½ tablespoon of the veg mixture) and seal the edges of the Momo after wetting by pleating to give it the shape of a dumpling. Keep these dumplings covered with a damp cloth until 6-10 are made.
- Heat some water in a wide mouthed pan, place the bamboo steamer and bring the water to boil.
- Place the dumplings on the steamer, cover, and steam for 10-15 minutes.
- Serve the delicious, hot and healthy veg dumplings with any hot sauce/chutney.
