Vegan Banana Bread

A scrumptious quick vegan banana nut bread.

Ingredients:

Dry Ingredients:
  • 2 ½ cups flour (whole wheat flour or all purpose flour)
  • 1 ½ teaspoon salt
  • 1 ¼ teaspoon baking soda
Wet Ingredients:
  • ½ cup oil
  • ¾ cup brown sugar
  • 2 cups mashed bananas (over ripe bananas preferred)
  • 1 teaspoon vanilla extract
Optional ingredients: 
  • ½ cup chocolate chips
  • ½ cup chopped walnuts
  • ½ cup shredded unsweetened coconut

Directions:

  • Preheat oven to 350 degrees Fahrenheit
  • In a bowl mix the dry ingredients
  • Ina a separate bowl whisk all the wet ingredients
  • Gently mix the dry ingredients into the wet ingredients
  • Fold in all the optional ingredients if using them
  • Oil a standard bread pan
  • Spoon banana bread mixture into the bread pan
  • Bake for one hour or until done
  • Remove from oven and leave in pan to cool for 10 minutes
  • Remove from pan when bread is cooled for 10-15 min.
  • Place it on wire rack for the bread to cool down further.

 

Best eaten sliced, toasted, with vegan butter, like bread. Enjoy!
