A scrumptious quick vegan banana nut bread.
Ingredients:
Dry Ingredients:
- 2 ½ cups flour (whole wheat flour or all purpose flour)
- 1 ½ teaspoon salt
- 1 ¼ teaspoon baking soda
Wet Ingredients:
- ½ cup oil
- ¾ cup brown sugar
- 2 cups mashed bananas (over ripe bananas preferred)
- 1 teaspoon vanilla extract
Optional ingredients:
- ½ cup chocolate chips
- ½ cup chopped walnuts
- ½ cup shredded unsweetened coconut
Directions:
- Preheat oven to 350 degrees Fahrenheit
- In a bowl mix the dry ingredients
- Ina a separate bowl whisk all the wet ingredients
- Gently mix the dry ingredients into the wet ingredients
- Fold in all the optional ingredients if using them
- Oil a standard bread pan
- Spoon banana bread mixture into the bread pan
- Bake for one hour or until done
- Remove from oven and leave in pan to cool for 10 minutes
- Remove from pan when bread is cooled for 10-15 min.
- Place it on wire rack for the bread to cool down further.
Best eaten sliced, toasted, with vegan butter, like bread. Enjoy!
