Zucchini Chocolate Lentil Cake

No white sugar | Lentil flour | Sweet Level - Mild | 2tbsp Oil only

Ingredients:

For Cake :

  • 1 cup all-purpose flour
  • 1 cup moong flour (yellow lentil)
  • 1/2 cup cocoa powder
  • 2 cups brown sugar
  • 1/8 cup of oil
  • 1 tsp baking powder
  • 1/2 tsp of baking soda
  • 2 medium-sized grated zucchini
  • 1/2 tsp salt
  • 3/4 cup hot water

For Frosting:

  • 1/2 cup unsalted butter(room temperature)
  • 3 tablespoon icing sugar
  • 2 tbsp semi-sweet chocolate chips (melted)
  • 1 tablespoon cocoa powder

Instructions:

  • Sieve and combine all dry ingredients (all-purpose flour + moong flour + cocoa powder + brown sugar + baking powder + baking soda + salt )
  • Add grated zucchini + oil
  • Add ¾ cup hot water gradually
  • Put the batter in a greased container and tap to escape air bubbles
  • Preheat the oven to 350F. Bake for 20 min.
  • For frosting - combine butter + melted semi-sweet chocolate + cocoa powder + icing sugar
  • Beat it until frosting turns stiff
  • Add frosting and refrigerate
